The Perfect Pancakes

To celebrate Shrove Tuesday tomorrow, we're sharing our favourite recipe for classic pancakes. In true French style, why not fill with cheese and ham for your very own French crepes. For red-wine lovers, enjoy with easy-drinking Chianti or for something lighter try with a chilled glass of Pinot Grigio Blush.

Ingredients

  • 210ml milk
  • 90ml water
  • 120g plain flour
  • 2 eggs
  • Pinch of salt
  • Oil for frying
  • Cheese and sliced ham for filling

Method

  1. Sift the flour into a mixing bowl. Add a pinch of salt. Make a well in the centre and add the eggs.
  2. In a separate bowl mix the milk and water.
  3. Using a wooden spoon, beat the eggs into the flour, then gradually add the milk / water mixture. Keep beating until you have a smooth liquid.
  4. Leave to stand, covered for 30 minutes.
  5. Heat some oil in a non-stick frying pan until very hot, then ladle in one ladleful of batter, coating the base of the pan.
  6. Cook until the base of the pancake is lightly browned.
  7. Flip the pancake over (careful!) and cook on the other side until lightly browned.
  8. Slide the pancake onto a plate, cover with foil and keep warm.
  9. Repeat the process until you have used up all of the batter.
  10. To serve, add your favourite fillings such as cheese and ham, then fold to form triangles.
  11. Enjoy!
